Here are a few of my favorite summer recipes:
1. Popsicles
Probably the most popular during the summertime are popsicles as they give instant refreshment. Besides the beauty of colors of this kiwi-mango-raspberry popsicle, it`s also a healthy choice with fresh fruit.
Ingredients
9 tbsp water
2 tbsp sugar
5 oz kiwi, peeled
6 oz mango, peeled
6 oz fresh raspberries

2. Raspberry Peach Lemonade
No matter what time of the year, there`s nothing like home-made fresh lemonade.
Ingredients
1/4 cup agave nectar
6 ounces raspberries
3 medium peaches, sliced
1 cup freshly squeezed lemon juice

3. Chicken Salad with Mango
I`ve had my first chicken salad with mango at a family dinner during the Summer. Even though I wasn`t convinced about the combination, I have to admit it does go very well together and the mango adds a refreshing touch to it.

4. Summer Salad
This is a recipe from my mum and besides being delicious, it`s also easy to prepare.
Ingredients
Penne Pasta
Tomato-Basil Pesto
Pieces of Bacon
Rocket Salad
Pine Nuts
Herbs (I usually use pepper and either an Italian mix or Oregano)
You can use a different kind of pasta and/or pesto to create your own variation.
Cook the pasta and fry the bacon. When baking the pine nuts be careful not to burn them, they just need a few minutes, so keep an eye on them. Put the cooked pasta in a bowl, add the pesto and mix. Add the fried bacon, rocket salad and pine nuts, mix it all up. Spice it up with herbs until happy with the taste and you`re ready!
5. Fruit Salad
I thought this was a clever idea instead of having a bowl with fresh fruit. You just cut up fresh fruit like strawberries, orange, pineapple & kiwi and instead of putting it all together, you divide it into separate portion making for a stylish dessert.
